Hortus conclusus

At Mater, the kitchen begins in the garden.
The Hortus Conclusus is a place of cultivation and contemplation, set in the heart of the Casentinesi Forests, where wild and cultivated plants grow side by side.

More than an orchard or a vegetable garden, it is a working space shaped by time, seasons and care. Here we grow, harvest and observe over thirty botanical species that later return to the table, transformed through simple gestures, patience and attention.

The Hortus reflects the rhythm of the forest and the monastic tradition of Camaldoli: a place where cultivation is inseparable from reflection, and where nature is not controlled, but accompanied.

What grows here becomes part of the kitchen — not as an idea, but as living matter.
